The Kitchen Bar
Aussies are relaxed about their food – but that doesn’t mean they don’t take it
seriously! That’s why respected food writers around the globe agree that some of
the best eating the world can offer is to be had in Australia. The Bondi kitchen
space is the perfect setting for some casually serious dining – with the
continent’s desert centre inspiring a rich setting for an expedition to new culinary
horizons.
Dominating the Kitchen Bar are two exclusive private dining areas, the Boabs,
which hold between 6 and 8 guests and are inspired by the desert tree of the
same name from the Kimberley region of north-western Australia, which they
closely resemble in size and shape. Our Boabs’ superb lattice of stylised
stainless-steel boomerang shapes floats like glass in the space, while inside, the
circular jarrah table’s ‘lazy Susan’ can be lifted away to reveal a deep, wide ice
bucket – perfect for chilling a bottle or two from the largest selection of quality
Australian wine available in the US.
Apart from the Boabs, the most striking feature of the Kitchen Bar’s design is its
walls, studded with over forty tons of iron ore, mined for us at Morawa, in the
central west of WA. Steel wire mesh holds these heavy, rich red rocks in huge
cast-iron frames. The floor of the Kitchen Bar is Sydney bluestone and around
the walls are panels containing spinifex, the desert grass of inland Australia.
Our open kitchen exposes the heart of house so you can watch the whole
cooking process, and the ‘pass’ to the serving team, in operation. The big
windows protect you from the heat of the action – and some of the more colourful
exchanges between the chefs as they work.
